Directions

  1. Create a custard by whisking the egg yolks and allulose together. Gradually whisk in the cream, then heat over low to medium-low heat for 5–10 minutes, stirring constantly, until slightly thickened. Do not boil.
  2. Remove from the heat and stir in the vanilla and salt.
  3. Let the mixture cool completely, then refrigerate until chilled.
  4. Beat the chilled mixture with an electric mixer until smooth and creamy. Mix in the chopped nuts if using.
  5. Transfer to a freezer-safe container and freeze for 4–5 hours. Time may vary depending on your freezer temperature and the container storing the ice cream.
  6. Let the ice cream sit at room temperature for a few minutes before scooping.
